Weekly Menu

I have so much decorating for Christmas and cleaning up after Thanksgiving to do this week, I haven't given much thought to this weeks dinners, but here's what I am thinking:

Monday: Breakfast spaghetti and roasted cherry tomatoes

Tuesday: Cranberry pot raost, as I need to use up a bag of cranberries

Wednesday: Pioneer womans spicy roast chicken legs, rice and green beans

Thursday: Zuppa Toscana soup that I never made last week and have a bunch of kale that needs to be used

Friday: Going to the Alamo drafthouse for dinner and a movie

Paula Deen's Pumpkin Gooey Butter Cake

I have been wanting to try this recipe for a while, and my DH's Thanksgiving lunch at work gave me the perfect opportunity to make it.

Cake:
1 box yellow cake mix
1 egg
1/2 cup melted butter

Filling:
1 8oz package of softened cream cheese
1 15oz can of pumpkin pie filling
3 eggs
1 tsp vanilla
1 16oz box of powdered sugar
1/2 cup melted butter


Preheat oven to 350 degrees, combine the cake mix, egg, and butter and mix well, pat the mixture into the bottom of a lightly greased 13 by 9-inch pan.


In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes.

Rainbow Cake

Before I post the Thanksgiving recipes I am working on today, I just had to post the rainbow cake I made for a friends birthday. I totally cheated and used boxed cake mix, and a lot of food colour, but it turned out pretty good in the end!







Rainbow cake:

Follow directions on package of yellow cake mix, divide batter equally into 6 parts
Red, orange, yellow, green, blue and purple food colour, I used close to a small bottle of each to get the depth of colour I wanted
Bake each layer at 350 for 8-10 minutes

My very first post! I thought I thought I would start with a quick menu plan for the week... this week is a little crazy with a lot of cooking, as Dh is having a Thanksgiving celebration at work. They are having the main meal catered (bbq) but I am providing appetizers, side items and desserts... so look for lots of pumpkin related posts in the coming week!

Monday: Fried pork chops with pumpkin ravioli and butter sage sauce

Tuesday: Pioneer womans spicy shrimp and rice

Wednesday: Zuppa Toscana soup

Thursday: Thanksgiving dinner... all the usual items!

Friday: Leftovers... turkey and bubble and squeak
