Bacon Wrapped Jalapenos

This is a Pioneer Woman recipe, it's simple but so very good, and actually the hubby is the official maker of the jalapeno thingys in our house, and he's pretty good at it too! the red sauce is a homemade version of the bronco berry sauce that Arby's serves with their jalapeno poppers. The hubby has always loved this sauce so when we started making these wrapped jalapenos he wanted to try and find a recipe for the Arby's sauce and everytime we serve them at a party we get tons of compliments and people asking for the recipe.

Ingredients:
Bacon
Cream cheese
Jalapenos

Cut jalapenos in half and remove seeds and white membrane
Fill each half with the softened cream cheese
Wrap each jalapeno piece with half a slice of bacon and secure with a toothpick
Bake on a pan with a baking rack at 375 for 20-25 minutes

Bronco berry sauce:
3/4 cup water
1/3 cup sugar
1/4 cup corn syrup
3 tablespoons pectin
2 teaspoons cornstarch
1 teaspoon vinegar
50 drops red food coloring
1/8 teaspoon onion powder
dash cayenne pepper
dash garlic powder
dash paprika
1/4 cup minced red bell pepper
1/2 teaspoon minced canned jalapeno peppers

1. Combine all the ingredients except the bell and minced
jalapeno peppers in a small saucepan. Whisk well.

2. Set saucepan over medium/high heat, uncovered. Add peppers
and bring mixture to a full boil, stirring often.

3. Reduce heat and simmer sauce for 5 to 7 minutes, or until
thick. Remove from heat and let sauce sit for about 10 minutes.

In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Stir in peanut butter until smooth.

Cherry Almond Coconut Cookies

I am a little obsessed with coconut right now, so when I saw this recipe over at Sugar Duchess I just had to make them, and they are so very good!

1 cup shortening
1 cup sugar
1 cup brown sugar
2 eggs
3/4 teaspoon almond extract
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2-1/2 cups flaked coconut
1 jar maraschino cherries, drained and halved

In a large mixing bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine the flour, baking soda and salt; gradually add to the creamed mixture. Stir in coconut.

Drop by rounded teaspoonfuls 2 inches apart onto lightly greased baking sheets. Place a cherry half in the center of each. Bake at 350 degrees for 12-13 minutes. Immediately remove to wire racks to cool.

Samoa Bars

I absolutely love the samoa girl scout cookies, so when I saw this recipe for homemade samoa bars at Baking Bites I knew I had to give it a try, and the neighbourhood party gave me the perfect opportunity to do so.
