Sweet And Sour Chicken

I found this recipe on another food blog http://amberskitchen.blogspot.com/ a few weeks ago and have been wanting to try it ever since. I love sweet and sour chicken and the recipe that I have always made is made all in a wok/pan on the stove top, so I was very interested to see how this baked sweet and sour would be.


Ingredients:
3-4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 cup cornstarch
2 eggs, beaten
1/4 cup oil

Sauce:
¾ cup sugar
4 tablespoons ketchup
½ cup vinegar
1 tablespoon soy sauce
1 teaspoon garlic salt


Cut chicken into chunks, season with salt and pepper


Dip chicken in cornstarch and then in egg


Fry in oil until brown but not cooked through


Place in a single layer in a baking dish, mix sauce ingredients together and pour over chicken.

Bake for one hour at 325 degrees. Turn chicken every 15 minutes. If you like extra sauce, make another batch of sauce and bring it to a boil on the stove top. Stir constantly and let cook over medium heat until thickened and reduced - about 6-8 minutes



I have to say that this turned out great, both the hubby and I loved it and we will definitly be making this again! We served it with rice, stir fried veggies and spring onion pancakes, I'll be posting the recipe for those soon.
