8 oz orzo
2 tsp curry powder (I like Penzey's sweet curry)
1/2 cup mayonnaise
Juice of half a lemon
1/4 cup raisins
1/2 red bell pepper, diced
1/2 cup diced english cucumber
Cook the orzo according to package directions.
In a large bowl mix the mayonnaise, curry powder and lemon juice together. Add in the orzo, bell pepper, cucumber and raisins and mix well. Cover and refrigerate until ready to serve.
